I have made this chicken salad for my co-workers before at a party and it was gone.

I don’t even cook my own chicken. Buying a rotisserie chicken is the greatest single cooking hack that I can give. Chicken, although one of my favorite things to eat, can be really hard to cook. If you roast a whole chicken (which is what you need for this recipe) you have the risk of it becoming dry and just ruining the chicken salad. Do yourself a favor and buy a pre-cooked chicken. You can use it in all sorts of recipes, like my Hearty Chicken and Spinach Noodle Soup!
This recipe is so easy and so tasty, you will never buy your own chicken salad again. Let me remind you, everyone likes different things about chicken salad. I personally like when the chicken is cubed, not shredded. I also like it less creamy when I know some people like it so creamy. Use my base recipe and adjust to what suits you!
1 whole rotisserie chicken, chopped
3 celery stalks, small dice
3/4 cup mayonnaise
1/4 cup sour cream
2 tbsp Ranch dressing
1 tbsp salt
1 tbsp pepper
1/2 tbsp cumin
1/2 tbsp chili powder
*Note: Chili powder adds flavor, not spice. If you like your chicken salad with a kick, add some cayenne pepper instead.
One of my absolute favorite things to do is to make chicken salad wraps! Just get some tortillas and a green (I love spinach but you can use lettuce, kale, whatever you’d like!) and make wraps out of them! No need for any added dressing since the chicken salad is creamy already. This recipe makes five wraps (which ironically coincides with five days of a work week … hmmm) so I wrap them up in foil and I have wraps throughout the week! Bring some carrots or other veggies for an awesome lunch!
