I’m that person who always forgets to pack a lunch.
Or even worse, I pack a lunch and leave it at home.
But what makes it even worse is that it is so easy to leave work or school and find the easiest fast food place to go get lunch. These places are full of bad choices and lead to many regrets.
So here are four of my go-to last-minute healthy lunches that are easy, quick and low-calorie to keep you on your weight loss journey.
1. Salad Bar/Produce Section
This is my proudest hack of all. There is a grocery store right down the road from where I work. I go in, head straight for the salad bar. I grab the smaller container and go to town! Now here is where you can fall of the track. Most salad bars have a section of terrible choices: pasta salad, chicken caesar salad, and croutons. Now I am not saying to avoid these things all the time, but opt for some healthier options. Fill up your container, grab a piece of fruit and you have a healthy balanced lunch.
Here is my salad bar salad with a BONUS tip!
- Bed of Spinach
- Grilled Chicken
- Roasted Red Peppers
- Sliced Tomatoes
- Marinated Mushrooms
… and as a dressing? Spoon in some extra juice from the marinated mushrooms. Basically acts as oil and vinegar and you won’t be tempted to grab a calorie filled packet of dressing.
If done right, this can be a fast, healthy and delicious last minute lunch. Here is what I suggest getting when going to Chipotle to ditch the calories without losing the flavor.
- Get a burrito bowl instead – ditch the tortillas and chips.
- No rice, but ask for extra beans.
- Get the peppers and onions.
- Chicken is your best bet – all the protein options are alright but chicken has a lot of flavor without a lot of sodium.
- Opt for any salsa you like – keep in mind that it has a lot of salt so don’t go crazy.
- Corn and lettuce are great! Maybe ask for more lettuce to replace the rice and make it more of a salad.
- Pick one of the three and ask for just a little: cheese, sour cream or guacamole.
Stick to these guidelines and enjoy your flavorful lunch!
3. Tuna Avocado Salad
One of my favorites! If you haven’t discovered that an avocado is just as creamy as mayonnaise than you are highly missing out on a great, healthy alternative. Get a can of tuna (I usually keep a few at my desk) and just go out and buy an avocado. While at the grocery store, add some extra fixings to it but going to the salad bar: tomatoes, lettuce and carrots. Grab a piece of fruit and in no time, you have a great creamy, healthy lunch.
4. Turkey & Swiss Wrap
Lunch meat is super easy to buy and even easier to prepare. My favorites are turkey (plain white meat turkey – no honey glaze) and swiss cheese. But you can pick anything that you like. Get whole wheat tortillas and you are ready to go! You can use mayo for this, but to opt for a healthier method (which you should do) is to get some tomatoes or avocados to add a creamy texture and some juiciness to the wrap.
